Ninfa Laurenzo

Ninfa Laurenzo (May 9, 1924 – June 14, 2001) was a Mexican-American restaurateur and entrepreneur who created one of the most beloved and influential restaurants in American culinary history. Born Ninfa Rodríguez in Harlingen, Texas, she initially worked as a tortilla maker and street vendor before opening her first small taquería in Houston in 1973 with a $300 investment. Ninfa's restaurant quickly became legendary for its fresh, authentic Mexican cuisine and innovative dishes. She is credited with inventing or popularizing the 'puffy taco'—a crispy, fluffy fried tortilla shell filled with various meats and vegetables—which became a signature item and cultural icon of Houston.
